Twenty One.





Oh dear I've neglected the blog again.... sorry. So much has been going on lately e.g. work, family problems, blah blah blah. But I thought I'd ease back in with a post about my birthday, which was in February (oops) haha. I'M FINALLY 21! I guess that means more responsibility and stuff huh? 
I spent my actual birthday which was a Wednesday (27th February) with my sister. We went to the Saatchi Gallery to see an exhibition I had wanted to see for a while. Then we had lunch in Chelsea at a restaurant called Big Easy. it was so nice, I had to bring some of the food back home with me though! Then on the Friday I dragged my friends to a club in Brixton and met Professor Green! I was so starstruck... His girlfriend Millie (from Made in Chelsea) was there too but she looked super drunk haha. 
Then on the Saturday I had a big house party which was so good, even though I can't remember most of it. I had a lot of fun and nothing was damaged. I wish I had a picture of my outfit though but surprisingly there's hardly any pictures of me from that night.
I had an amazing birthday though! I wonder what my 21st year has in store for me.....

On Saturday, my sister and I took a random trip to the Natural History Museum. I had forgotten how much I loved that place, especially the dinosaur section. The building is pretty cool too. I was going to take more pictures but my camera died (dammit!). We then went for a walk through Hyde Park which was lovely, then for a late lunch at Pizza Express (my favourite restaurant).
I'm trying to figure out ways to make my blog look better. It's a bit crap and I'm no good at all that kinda stuff so any help is welcome but I'm sure I'll figure it all out eventually!

COCO COOKS - Prawns in hoisin sauce with noodles.

In a bid to stop eating out all the time and wasting money on junk food, I've recently started cooking a lot more. I thought it would be a good idea to start sharing recipes that I've made up/discovered. I used to be such a bad cook but now... move over Nigella! 

I thought I'd start by showing you how to make a delicious Chinese prawn dish. I'm obsessed with prawns at the moment. This is super easy to make and it's really tasty!

Prawns in hoisin sauce with noodles


INGREDIENTS

-Packet of peeled prawns (I bought two because I was feeding an army)
-A handful of button mushrooms (sliced)
-A handful of mangetout or sugar snap peas*
-5 cloves of garlic (minced)
-1 chilli (chopped)
-Half an onion (chopped)
-Packet of rice noodles
*You can add whatever vegetables you like e.g. cabbage, red peppers, yellow peppers etc

***Ingredients for the marinade to go over the prawns***
-1 inch of ginger, peeled and thinly sliced
-2 tablespoons of olive oil
-3 tablespoons on hoisin sauce
-2 tablespoons of soy sauce (I used reduced salt soy sauce)
-Half of your minced garlic
-A teaspoon of sugar

How to make it.

-Wash prawns and put them into a bowl. 
-Mix the marinade ingredients into another bowl then pour them on top of the prawns. Leave them in there for 20-40mins (The longer you leave them the more flavour the prawns will have)
-Grab a wok and turn the heat on your stove to medium/high and drizzle some oil into the wok. 
- Once the oil is hot put the onions, chilli and the rest of the minced garlic into the wok and stir. 
- When you see the onions and garlic are turning brown add in the marinaded prawns and stir frequently till prawns are cooked. 
-Once prawns are cooked add in the mushrooms and mangetout/sugar snap peas and stir in for 5 minutes. 
-I bought noodles that were already cooked in a packet so I just put them into the wok and cooked through for about 5 minutes. 

THEN VOILA! FOOD IS DONE! 
*You can serve with rice if you like.*

Ghana 2012 (Part 1)














Been kind of slacking when it comes to updating this blog. But hopefully since uni is done I'll be able to update of often. 

Went to Ghana a couple of weeks of go to visit family and stuff. Enjoyed it way more than I thought I would, wish I could of stayed longer. These are a few pics from the trip, I have A LOT of photos to sort through so I've only put a few in this post and will post the rest at a later date.
